“When the kids were growing up, I was working full time and married to a farmer who worked 7 days a week from dawn to dusk. We were also doing row crops and commercially harvesting tomatoes. This meant that Steve was harvesting tomatoes up the valley from July to October. He was gone for 4 months of the year for 15 years. I needed something easy, that could freeze and/or hold in the refrigerator for a few days. You can make a big salad – cut some fruit – and then microwave individual servings of the dish. Great for a family with kids on crazy schedules.” ~ Donna Heringer
